Here's what we did, for anyone following along:

1. Install prerequisites (office, .NET, WSE, C++)
2. Install "SP25 for SBOP EPM EXCEL CLIENT 10.0" (even for 10.1, smh)
3. Install BPCAdmin.exe
4. Modify .\SAP BusinessObjects\EPM Add-IN\EPMXLClient.dll.config
   Under the tag <appSettings>, add:
   <add key="ConnectionDefinitionInRoamingUserProfiles" value="True"/>
   
5. Publish the apps:
   .\Internet Explorer\iexplore.exe http(s).../sap/bpc/web/
   .\SAP BusinessObjects\PC_MS\OSoftAdminMain.exe
   .\Microsoft Office\Office15\excel.exe
